Method
- Sauté garlic and sun-dried tomatoes (drained) in olive oil for 1 min until fragrant.
- Remove sun-dried tomatoes, add sliced chicken seasoned with salt and paprika, cook 1 min per side. Remove.
- Cook pasta according to instructions; reserve some water, then drain.
- Slice sun-dried tomatoes, add back to skillet with chicken.
- Add half-and-half and mozzarella, bring to a boil, then simmer, stirring until cheese melts and sauce is creamy.
- Mix pasta into sauce, add basil and red pepper flakes, thin with reserved pasta water if needed, season to taste, and simmer briefly.
