Ingredientes
  

Protein
  • 14-16 ounces Chicken Breast (boneless and skinless)
  • teaspoons Salt (divided) 1 teaspoon for chicken, ½ teaspoon for stew
  • 1 tablespoon Olive Oil
Vegetables
  • 1 Medium Onion small dice
  • 2 Carrots Carrots cut into rounds or half rounds
  • 2 Celery Ribs Celery sliced
  • 3-4 Cloves Garlic minced
  • ½ teaspoon Italian Seasoning
  • ¼ teaspoon Fresh Ground Pepper
Dairy & Flour
  • 2 tablespoons Butter
  • 3 tablespoons Flour (all purpose)
Liquids
  • 4 cups Chicken Broth
  • 12 ounces Red Potatoes cut into bite size pieces
Garnish & Serve
  • Chopped Parsley optional
  • Lime Wedges optional
  • Crackers, Bread, or Cooked Rice optional

Method
 

  1. Season chicken with 1 teaspoon salt and refrigerate.
  2. Heat oil, cook onions, carrots, and celery for 2 minutes.
  3. Add garlic, Italian seasoning, ½ teaspoon salt, and pepper; cook 1 minute.
  4. Melt butter, stir in flour, cook 2 minutes.
  5. Gradually add broth, scraping bits from bottom. Add chicken, bring to boil, then simmer 20 minutes.
  6. Remove chicken, shred, add potatoes, cook until tender 15-20 minutes. Return chicken, season to taste, serve garnished.

Adjust salt to taste at the end.
