Method
- Season chicken with 1 teaspoon salt and refrigerate.
- Heat oil, cook onions, carrots, and celery for 2 minutes.
- Add garlic, Italian seasoning, ½ teaspoon salt, and pepper; cook 1 minute.
- Melt butter, stir in flour, cook 2 minutes.
- Gradually add broth, scraping bits from bottom. Add chicken, bring to boil, then simmer 20 minutes.
- Remove chicken, shred, add potatoes, cook until tender 15-20 minutes. Return chicken, season to taste, serve garnished.
