Ingredientes
  

Dough
  • 2 3/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • Pinch granulated sugar
  • 3/4 cup unsalted butter (melted)
  • 1/2 cup cold water
Filling
  • 2 medium onions (diced or thinly sliced)
  • 3 cloves garlic (minced)
  • 1 pound boneless, skinless chicken breasts (cooked and shredded)
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground red chili
  • 1 cup hot water
  • 1 egg beaten

Method
 

  1. Prepare the dough by mixing flour, salt, sugar, melted butter, and cold water until smooth. Chill for 15 minutes.
  2. Sauté onions and garlic until translucent. Add shredded chicken, paprika, cumin, salt, pepper, and chili; cook for 5 minutes.
  3. Roll out dough and cut into circles. Fill each with the chicken mixture and seal the edges.
  4. Brush empanadas with beaten egg and bake at 375°F (190°C) for 20 minutes or until golden brown.
  5. Remove from oven and let cool slightly before serving.

Notas

For a crispier crust, brush with egg wash before baking.
