  • 2 pounds boneless, skinless chicken thighs or breasts
Vegetables
  • 3 pieces carrots diced
  • 3 stalks celery diced
  • 1 piece onion diced
Potatoes
  • 4 medium potatoes peeled and cubed
Garlic
  • 4 cloves minced garlic
Broth & Seasonings
  • 4 cups low-sodium chicken broth
  • 2 tablespoons dried thyme
  • To taste salt and pepper
  • 1/4 cup flour (optional for thickening)
Garnish
  • Chopped fresh parsley for garnish

Method
 

  1. Step 1: Sear the chicken until golden brown.
  2. Step 2: Place seared chicken, diced vegetables, potatoes, garlic, and bay leaves into the slow cooker.
  3. Step 3: Add thyme, salt, and pepper; stir to combine.
  4. Step 4: Pour in chicken broth; add flour if thickening desired.
  5. Step 5: Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Step 6: Serve hot, garnished with parsley.

Notas

For a thicker stew, add flour during cooking and stir well.
