Homemade Chicken Empanadas

Ingredientes
  

Dough
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon baking powder
  • ½ cup unsalted butter, cold and cubed
  • 1 large egg
  • ½ cup cold water
Filling
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon chili powder
  • 1 ½ cups cooked, shredded chicken
  • ½ cup diced bell peppers
  • ½ cup frozen peas
  • ¼ teaspoon black pepper
  • ¼ cup chicken broth
  • 1 egg egg wash (for sealing and glazing)
  • 1 tablespoon water (for egg wash)

Method
 

  1. Mix flour, salt, and baking powder; cut in butter until crumbly.
  2. Beat egg with water; combine with flour mixture to form dough. Knead, wrap, and chill 30 min.
  3. Sauté onions in oil until translucent; add garlic and spices. Mix in chicken, peppers, peas, broth, and seasonings. Cool filling.
  4. Roll out dough to ⅛-inch; cut into 4-5 inch circles. Fill, fold, seal edges with fork.
  5. Brush empanadas with egg wash. Bake at 375°F (190°C) for 20-25 min until golden, or fry until crispy.

Notas

For a crisper crust, bake instead of fry and brush with egg wash before baking.
