  • 4 pieces boneless, skinless chicken breasts
Vegetables
  • 1.5 pounds baby Yukon Gold or red potatoes
Aromatics & Cheese
  • 4 cloves garlic minced
  • cup grated Parmesan cheese
Oils & Seasonings
  • Olive oil Olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
  2. Pat chicken dry, then season with olive oil, Italian seasoning, smoked paprika, salt, and pepper.
  3. Toss halved potatoes with olive oil, minced garlic, Parmesan, salt, and pepper.
  4. Arrange chicken on one side of the sheet and potatoes on the other. Roast 25-30 min until chicken reaches 165°F and potatoes are crispy.
  5. Optional: Broil for 5 minutes for extra crispiness. Garnish with parsley before serving.
