Ingredientes
  

Protein
  • 4 pieces boneless, skinless chicken breasts
Grains
  • 1 cup uncooked long-grain white rice
Broth & Canned Goods
  • 2 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
Vegetables
  • 1 cup broccoli florets
  • 1 cup mixed frozen vegetables (carrots, peas, corn)
Dairy & Oils
  • 1 cup shredded cheddar cheese, divided
  • 2 tbsp olive oil
Spices & Seasonings
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
Garnish
  • Fresh parsley, chopped for garnish

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Mix rice, broth, soup, spices in a baking dish.
  3. Layer vegetables over rice, then place chicken on top. Drizzle with olive oil.
  4. Cover with foil and bake 45 minutes.
  5. Remove foil, sprinkle cheese, bake uncovered 15 minutes.
  6. Garnish with parsley, rest a few minutes, then serve.

Notas

Use fresh parsley for best flavor.
