Ingredientes
  

Dough
  • 3 cups all-purpose flour
  • 1 tsp salt
  • ¾ cup unsalted butter, cold and cubed
  • 1 egg egg
  • ¼ cup ice water
  • 1 tbsp white vinegar
Filling
  • 2 tbsp olive oil
  • 1 small yellow onion, finely diced
  • 1 red bell pepper diced
  • 2 cloves garlic, minced
  • 1.5 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp chili powder
  • ½ tsp dried oregano
  • ½ tsp salt
  • 2 cups cooked chicken, shredded
  • ½ cup chicken broth
  • cup green olives, chopped
  • ¼ cup fresh cilantro, chopped
  • 1 egg for egg wash

Method
 

  1. Prepare the dough: whisk flour and salt, cut in butter, then add egg, water, and vinegar. Knead into a dough, chill for 30 minutes.
  2. Cook the filling: sauté onion and pepper in oil, add garlic and spices, then chicken broth, olives, and cilantro. Cool slightly.
  3. Assemble empanadas: roll dough, cut circles, add filling, seal edges, and brush with egg wash.
  4. Bake at 375°F (190°C) for 20-25 minutes until golden and crisp.

Notas

Chilling the dough makes the crust flakier and easier to work with.
